Almond CakeRegarding catering expenses, we have a small, almost anecdotal reference from Hamburg in the form of a transcript from the chamberlain's accounts, which were burned in 1842, reproduced in Nicolaus Staphorst's Historia Ecclesiae Hamburgensis Diplomatica, published in 1731.1)2) After that, in 1430, the honourable city council sent a contingent armed with crossbows and horse-drawn carts against the Hussites who had invaded Saxony. The contingent, presumably consisting of citizens and servants, crossed the Elbe near Artlenburg on 11 January and advanced 3 to 4½ German miles2) every day without rest until they encountered the remaining imperial troops in Delitzsch (Saxony) on 21 January, with whom they continued their march. In the meantime, the Hussites had advanced to Franconia, so that Hamburg's support in Saxony had become dispensable, and the force ultimately had no choice but to begin its journey home on 30 January. Back in Hamburg, they presented a large expense account of 168 ℔, 18 ß and 1 ₰ to the chamberlain, for beer, bread and food.4)

Then as now, catering for participants at events is an important factor, often even the most important one. The motto "No food, no action" proves true times, as many adversities are easier to bear with good food than with sausage and cheese sandwiches. We are aware that our catering does not reflect the historical cuisine in the field or in camps, but we also communicate this openly to our fellow combatants and visitors. Last but not least, events that require valuable free time and a great deal of time, logistical and financial effort should also be fun.

All our dishes are prepared exclusively according to traditional contemporary recipes using ingredients that were available at the time. At events, we cook and dine using historical equipment. Over the years, we have tried out many recipes, some of which we would like to present here and which we enjoy using time and again.
